Healthy, green, and delicious is how to describe this amazing sauce which is packed with leafy greens. This super easy 10-minute sauce recipe is my go-to when I want something comforting but healthy for dinner. I like to use this sauce with gnocchi but you can also use pasta or orzo, you might need to make some little adjustments but it will still be delicious. I often say that my recipes are foolproof but this one truly is, all you need to do is add all the ingredients to a blender or a food processor and bake you gnocchi and you are done.
Ingredients
- 300 grams of spinach
- handful of basil
- one can of cannellini beans
- one lemon
- 1 tablespoon of garlic powder
- 3 cloves of garlic
- gnocchi
- salt and peper
Recipe
- Add the cannellini beans to the food processor with half a cup of water. Blend until smooth, and add the spinach and basil to the blender as well. Blend again until smooth, it needs to become a smooth sauce. If you are having trouble with blending you can always add a little bit extra water.
- Now juice half a lemon and add the lemon juice to the sauce. Add the garlic powder and some salt and pepper to the sauce and blend again until smooth.
- Bring the water to a boil and cook the gnocchi according to the directions. Drain the gnocchi and set aside. The one that I have needs to cook for 3 minutes but I like to cook it for 2 minutes. This way the gnocchi stays a bit more al dente and doesn’t fall apart when frying it in the pan.
- Now add a bit of olive oil to a frying pan and add the garlic. Make sure that the heat isn’t too high, and make sure that you don’t burn the garlic because it will become bitter. After about 2 minutes add the gnocchi to the pan and fry it until the becomes crispy on the sides. Keep stirring to prevent it from sticking to the pan, and now add the green goddess sauce to the pan. Give it all a good stir and make sure that the sauce can become warm.
- Now serve the gnocchi with the sauce and add some feta cheese on top of it to finish it and enjoy your delicious and healthy sauce!
