Airy, sweet, and tart is how I would describe this amazing homemade lemon meringue pie. If you are like me and you love to bake for friends and family this recipe is amazing. I can promise you that everyone will love this pie. It is easy to make and pretty much foolproof. I made this pie for my friends for our Christmas dinner and they absolutely loved it. My friends don’t really love to cook or bake but that didn’t stop them from asking for this recipe. The recipe is pretty simple and it does require some technical skills but nothing too difficult. I have tried to make this recipe as easy and understandable as possible.

Ingredients

  • 225 grams grain biscuits
  • 110 grams of butter
  • 4 lemons
  • 400 grams of condensed milk
  • 4 big eggs
  • 110 grams of fine sugar
  • 20cm spring-form pan

Recipe

  1. In a food processor add the biscuits and blend until you get fine crumbs. If you don’t have a food processor you can also use a rolling pin or something else to crush the biscuits but make sure that they are really fine and that there are no big lumps left. Now melt the butter and add the melted butter to the biscuits and mix well until full combined.
  2. Now add the biscuit mixture to a spring-form pan and press it flat to the bottom and sides with your fingertips. It is easier to start at the edges.
  3. Roll the lemons on your workstation, this makes it easier to get all the juice from the lemons. Before juicing the lemons, zest the peel from all four of the lemons and set aside. Juice the lemons and add the lemon zest, the juice and the condensed milk to a bowl and mix until you get a smooth and even mixture.
  4. Divide the egg white from the egg yolks. Add the yolks to the condensed milk mixture and mix again till smooth. Pour the mixture on to the biscuit bottom.
  5. Now whisk the egg whites in a big bowl until they become fluffy. Slowly, one teaspoon at a time, add the sugar to the bowl. Keep going until you have added all the sugar to the egg whites and keep mixing until stiff peaks start to form. The egg whites should look stiff and shiny.
  6. Spoon the egg whites on top of the lemon condensed milk filling in the spring-form pan. Make a mountain of egg whites on top of the lemon condensed milk filling.
  7. Put the pie in a 170 degrees Celsius, preheated, oven, and bake for 30 minutes until the top becomes crunchy, and light brown and the filling is stiff. After this take the pie out of the oven and make sure you let it completely cool down. Now serve and enjoy your homemade lemon meringue pie.
