Are you looking for an amazing, creamy but healthy pasta sauce I got you covered. This easy 5-minute sauce can be served on pasta, gnocchi, orzo, or even risotto. This healthy sauce is packed with vegetables, protein and it is vegetarian.

If you’re like me and love to cook but sometimes just don’t really feel like it, and also don’t want to order takeout, then this is the way to go. After a long day of work, you might not feel like cooking, but ordering food and getting a lukewarm meal also isn’t that glamorous. So you want a quick and easy dinner, grabbing a pizza from the freezer probably won’t leave you feeling the best. So, this easy and quick sauce might be just what you need.

You will probably have a lot of the ingredients already at home. If not than here is a groceries list:

  • – frozen peas 400gr
  • – zucchini/courgette (one large)
  • – basil (handful)
  • – lemon (juice)
  • – garlic powder 1tsp
  • – cottage cheese 200gr
  • – parmesan cheese 100gr
  • – vegetable stock
  • – pasta/gnocchi/orzo/risotto

This recipe calls for a food processor or blender.

Add the vegetable stock to a pot with water and let it come to a boil. When the water with the vegetable stock is boiling add the zucchini and turn down the heat to let it simmer. Let it simmer for 10 minutes. After 10 minutes add the peas and let it all simmer for 5-10 minutes. Afterwards drain the vegetable stock and set aside.

Meanwhile in a big pot bring water to a boil and add a generous amount of salt. (When making the recipe with gnocchi you shouldn’t add too much salt to the water.) While you let the water for the pasta come to a boil, add the peas, zucchini, basil, and the juice of one lemon to the food processor. Blend until smooth, now add the cottage cheese and the parmesan and keep blending until you get a smooth consistency.

You can set the sauce aside and cook the pasta according to the package. After draining the pasta, add the sauce to the pasta/gnocchi/orzo/risotto. After adding the sauce to the pasta, try it and add salt and pepper to taste. Serve the dish warm with a little parmesan cheese on top to finish it off.
